A little help understanding paths

I'm having a hard time wrapping my head around paths. Not sure how to set them up, and not really sure when it's best to use them (although I have a basic understanding of that part) For a "top down" type of game, such as the usual adventure or maze type of project, if I'm building walls (solid tiles) similar to the pic below, would paths be the best way to approach that? As it stands, to have the basic brick look, with corner ends and a bit of cracks/weathered look, it takes 8 tiles. So, best for paths? Same thing for the floor, I suppose -- if want to change that "brick" to "old, weathered wooden planks," best to use paths there?
